Prepare Sweet Lassi, Mango Delight & Kaju Barfi for Indian Feasting

3 Top Asian Recipes,traditional Indian recipes to be enjoyed any time. Sweet Lassi to drink, Alphonso Mango Delight dessert & delicious,sweet Kaju Barfi, simple & easy.

The following recipes are for traditional but simply prepared foods that will enhance any Indian meal. Alphonso Mangoes or Hapoos Mangoes are known as the King of Mangoes because of their delicate and sweet flavour, the Alphonso Mango Delight here is a delicious end to any meal.

Kaju Barfi is one of the most popular and expensive Indian sweets and is often given as a gift at Diwali and other Asian celebrations.

Lassi is a traditional yogurt drink to enjoy with meals. Lassi can either be sweet or salty, dependent upon taste. Milk or yogurt drinks are ideal with hot and spicy curries as they take away some of the hotness of the curry.

Sweet Lassi (To Serve 6)

Ingredients:

  • 500ml plain yogurt
  • 4tbsp sugar
  • Crushed ice
  • Pistachio nuts

Method:

  1. Put yogurt, sugar and ice in blender and mx well until froth appears
  2. Sprinkle pistachio nuts on top.

Your Sweet Lassi is ready to drink.

And for after a hot and spicy meal, enjoyed with family and friends, why not try the delicious dessert, Alphonso Mango Delight?

Alphonso Mango Delight

Ingredients:

  • 6 Fresh Alphonso mangoes
  • Half kg Khoya
  • Half cup sugar
  • Half cup ghee
  • Two scoops of strawberry icecream
  • 15/20 strands of saffron (soaked in 2tsp hot milk for 15 minutes)
  • 10/12 green cardamom (peeled and powdered)
  • Few slices of almond and pistachio (to garnish)
  • 3/4 fresh strawberries (cut into halves to garnish)
  • 100g chocolate (melted to garnish)

Method:

  1. Peel mangoes and strain the pulp
  2. Mix the pulp into khoya and heat in a heavy based pan on low flame until it thickens
  3. Add ghee gradually, remove from heat once the ghee separates
  4. Dissolve the sugar in 1 cup of water and cook to make a thick syrup
  5. Mix the mango khoya on a low flame with the syrup and stir until it thickens
  6. Add saffron and cardamom powder and mix well
  7. Remove from heat and pour onto a greased plate to cool
  8. Place two scoops of icecream on top
  9. Garnish with the almond, pistachio and strawberries and pour over the melted chocolate

Kaju Barfi is a traditional Indian sweet which is particularly relished at Asian celebrations such as Diwali, but it is so cheap and easy to make, it should be enjoyed all year round.

Kaju Barfi

Ingredients:

  • 2 cups cashew nuts (soaked in water for 2 hours)
  • Half cup of water
  • 1 cup powdered sugar (make to powder in liquidiser)
  • 1 tbsp ghee
  • Half tsp Cardamom powder
  • Edible silver foil (this is optional)

Method:

  1. Drain and blend the cashews to a fine paste with as little water as possible
  2. Make syrup in a saucepan using the powdered sugar and water
  3. Add the cashew paste to the syrup and cook on a low/med heat, stirring continuously until a softish lump is formed
  4. Add ghee and cardamom powder and mix well
  5. Remove from heat and spread onto a clean, greased surface,
  6. Using a rolling pin, roll the mixture out quickly
  7. If using edible foil cover the mixture with this
  8. When cool cut into squares or diamonds
